Here’s a list of some of my favourite meal prep recipes for lunch and dinner. These time saving recipes are bursting with flavour and deliciously satisfying. Don’t be afraid to switch up some of the recipes to suit your preference, switch broccoli for cauliflower or salmon for chicken – make it your own!

These salmon quinoa burgers are guaranteed to impress you. They’re so easy and quick to prepare, I love to make a double batch and freeze a few for later in the week. A delicious high in protein and filling burger perfect for lunch or dinner.

The tastiest Vegan Bean Free Chilli. I love chilli and my tummy loves chilli but sometimes I need a bean free version. Plus, a lot of you guys have asked for more bean free vegan recipes! The mushrooms in this recipe are a pure double for beef, you could fool any meat lover! This chilli is full of delish veggies and rich in flavour with the added cacao. I love prepping this dish for my week day meals as it gets better and better each day. I love it served with brown rice, lentil pasta or mashed sweet potato.

Creamy Tofu Broccoli Bake
One of the biggest hits on the blog is my chicken and broccoli bake and since I have gone more plant based, I needed to make a vegan version! The best thing about this recipe is the white sauce – you can use this base for so many different recipes that require a béchamel style cheesy sauce. This recipe is super easy to make just see here. You can also make this recipe your own by opting for slightly different ingredients. If you’re not a fan of tofu, why not use tempeh or vegan sausages? You can swap the broccoli for cauliflower or sweet potato too. And if you want, change the quinoa for oats or ground nuts however, in my opinion the quinoa gives the best topping result!
