Rhubarb Crumble Parfait
Rhubarb season is here so there are no excuses not to make this tasty dessert. Its a fantastic recipe for dinner parties or friends calling over cause you can prepare them well in advance and let them sit in the fridge. They were a big hit in our house at home, even my dad was a fan and he really loves his guilty desserts.

Ingredients
Stewed Rhubarb
- 2 “ Fresh Ginger Grated
- 6 Large Rhubarb Stalks
- 4 tbsp. Maple Syrup
- Juice of 1 Orange
Crumble
- 100g Ground Almond
- 150g Flaked Almonds
- 100g Ground Hazelnuts
- 2 tbsp. Coconut Oil/ Butter
- 1 tbsp. Maple Syrup
Filling
- 500g Greek Yogurt
Method
- Stew the rhubarb along with the ginger, orange vanilla and maple until wilted and broken down fully.
- Let cool to one side.
- For the crumble mixture, combine all the ingredients in a bowl, after, spread out evenly on a baking tray and toast for 15 minutes at 200°C. Let cool.
- Begin Layering the parfait – 2 tbsp of each; rhubarb, crumble, yogurt and repeat.
