Lettuce Boats

A fresh light dish to welcome us into the summer! I love lettuce boat sambos, you can load them up with tonnes of different fillings and they leave you surprisingly satisfied and full.

Serves 1

Cooks in 15 Minutes


  • 4 Long Lettuce Boats
  • 200g Prawns
  • 1 Clove of Garlic Crushed


Homemade Slaw

  • ΒΌ Grated Red Cabbage
  • 1 Small Carrot Grated
  • 15g Toasted Seeds
  • 1 tbsp. Rice Vinegar
  • 1 tbsp. Maple Syrup
  • 1 tsp. Dijon Mustard



  • Handful Fresh Coriander Chopped


Yogurt Sauce

  • 1 tbsp. Natural Yogurt
  • 1 tsp. Mixed Herbs
  • Juice Β½ Lemon


  1. Prepare a hot pan with some butter, add in the prawns and garlic and cook for 2-3 minutes each side until golden on edges and cooked.
  2. Combine all the slaw ingredients, likewise stir together the yogurt dressing ingredients.
  3. Load up the lettuce cups with the slaw, prawns, coriander and drizzle in the yogurt sauce.
