Curried One Pot Rice Bake

An easy, all in one meal for a family dinner or meal prep!

Serves 4-6 portions

  • 300g brown basmati rice
  • 1 head broccoli washed and chopped into florets
  • 1 squash peeled and diced
  • 2 tins coconut milk
  • 2.5 tbsp curry powder
  • 1 tin chickpeas
  • 2 large handfuls of raisins
  • 2 limes


  1. Preheat oven at 200â€ĒC
  2. Combine the rice, broccoli, squash, curry powder, and coconut milk in a large casserole dish (that has a lid) and stir well.
  3. Place on the lid and bake for 50 minutes until the rice is cooked.
  4. Once cooked, stir in the chickpeas and raisins, add the lime juice, and zest. Combine well & tuck in.
