Curried One Pot Rice Bake
An easy, all in one meal for a family dinner or meal prep!

Ingredients
- 300g brown basmati rice
- 1 head broccoli washed and chopped into florets
- 1 squash peeled and diced
- 2 tins coconut milk
- 2.5 tbsp curry powder
- 1 tin chickpeas
- 2 large handfuls of raisins
- 2 limes
Method
- Preheat oven at 200âĒC
- Combine the rice, broccoli, squash, curry powder, and coconut milk in a large casserole dish (that has a lid) and stir well.
- Place on the lid and bake for 50 minutes until the rice is cooked.
- Once cooked, stir in the chickpeas and raisins, add the lime juice, and zest. Combine well & tuck in.
