Chilli Taco Tower
Nothing is better than having your average take out meal and not feeling one bit guilty about it. I love cheesy chips and heavy wholesome meals, unfortunately I can’t have that everyday so Its nice to have substitutes that won’t leave you feeling sluggish. I did make some crackers to go along with this dish, however it was a bit of an experiment and needs to be perfected, so I will keep you updated on that one! But for now enjoy the chilli, sweet potato thins, avocado spread and my new favourite dip that goes with everything – SWEET CASHEW CHEESE (drool)…..
*Serve with fresh organic corn on the cob sprinkled in paprika and drizzle with some coconut oil.

Ingredients
Chilli
- 1 pound ground meat steak/turkey
- 1 large onion
- 1 tbsp cumin
- 1 tbsp sweet paprika
- 1 tbsp chilli
- 1 large red chilli
- 2 large cloves of garlic
- 1/2 can chickpeas/ kidney beans
- 1 tin chopped tomato
Sweet potato thins
- 3 large sweet potatoes
- 2 tbsp coconut oil/rapeseed oil
Avocado spread
- 1 ripe avocado
- Handful fresh basil leaves
- 2 tbsp lemon juice
Sweet Cashew Cheese
- 1 large sweet red pepper
- 250 g cashews soaked for an hour in water
- 2 tbsp lemon juice
- 3 tbsp water
- 2 tbsp nutrional yeast
Method
Chilli
- Heat some oil coconut or/rapeseed in a large pot over medium heat.
- Add in the onion, garlic, chilli, cumin, sweet paprika, chill powder until nicely browned and soft.
- Add in your meat/poultry – keep stirring whilst breaking it into pieces, cook this slowly so your not burning any bits. (about 20 minutes)
- Add the tomatoes, and bring to boil for 2 minutes.
- Let simmer for 15 minutes. Add chickpeas/beans and simmer for another 5 minutes.
Sweet potato thins
- Preheat oven to 200ºc
- Thinly slice sweet potatoes, toss them with a little oil (2 tbsp) and spread them out evenly on parchment paper. Season well with salt & pepper *if you like spice sprinkle some cajun pepper over them.
- These will take about 25 minutes, keep a close eye on them and turn them over during cooking.
Avocado spread
- Place all ingredients in a food processor and blend until creamy. Add salt to taste.
Sweet Cashew Cheese
- Place the halved sweet pepper on a baking tray, drizzle with some oil, season well and cook until softened and browned lightly.
- Drain the cashews of excess water and place in a food processor, along with the roasted sweet pepper & juices from cooking.
- Blend together until there are no bits it should be like a dry paste.
- Add lemon juice, water and nutritional yeast, and blend.
- Your final dip should resemble a creamy dough. You can add a little more water if yours looks too dry.
