
Lettuce Boats


A fresh light dish to welcome us into the summer! I love lettuce boat sambos, you can load them up with tonnes of different fillings and they leave you surprisingly satisfied and full.

Ingredients
- 4 Long Lettuce Boats
- 200g Prawns
- 1 Clove of Garlic Crushed
Homemade Slaw
- ΒΌ Grated Red Cabbage
- 1 Small Carrot Grated
- 15g Toasted Seeds
- 1 tbsp. Rice Vinegar
- 1 tbsp. Maple Syrup
- 1 tsp. Dijon Mustard
Garnish
- Handful Fresh Coriander Chopped
Yogurt Sauce
- 1 tbsp. Natural Yogurt
- 1 tsp. Mixed Herbs
- Juice Β½ Lemon
Method
- Prepare a hot pan with some butter, add in the prawns and garlic and cook for 2-3 minutes each side until golden on edges and cooked.
- Combine all the slaw ingredients, likewise stir together the yogurt dressing ingredients.
- Load up the lettuce cups with the slaw, prawns, coriander and drizzle in the yogurt sauce.
