Pecan Spiced Pancakes

October is here, the month of pumpkins and spice! I plan on doing lots of recipes incorporating the two from sweet to savoury, kicking it off with this simple delicious pancake recipe! Enjoy!



Serves 3 large pancakes

Cooks in Minutes


  • 1/4 cup coconut flour
  • 1 tsp ginger
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1/2 tsp mixed spice
  • 1/2 tsp baking powder
  • 2 tsp stevia OR sweetener of choice
  • 50g pecans
  • 1 egg
  • 2 egg whites
  • 1/3 cup coconut milk


  1. Whisk the eggs & milk together before adding in the flour, spices and other dry ingredients( except for the pecans)
  2. Leaving a couple of pecans whole for decoration,break the rest into quarters, and stir them in to the batter.
  3. Heat a little coconut oil on a frying pan, and spoon your mixture on, 2 tbsp per pancake.
