Pecan Spiced Pancakes
Serves 3 large pancakes

Ingredients
- 1/4 cup coconut flour
- 1 tsp ginger
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1/2 tsp mixed spice
- 1/2 tsp baking powder
- 2 tsp stevia OR sweetener of choice
- 50g pecans
- 1 egg
- 2 egg whites
- 1/3 cup coconut milk
Method
- Whisk the eggs & milk together before adding in the flour, spices and other dry ingredients( except for the pecans)
- Leaving a couple of pecans whole for decoration,break the rest into quarters, and stir them in to the batter.
- Heat a little coconut oil on a frying pan, and spoon your mixture on, 2 tbsp per pancake.
