BEET BEAN DIP w/ Broccoli & Purple Carrot Bites

These are my favourite of the STRONG ROOTS bites they have an extra crispy outer layer with a soft middle, I must go through a bag a week. I’m actually starting to get a bit greedy with them when we have them as snacks watching tv- β€œ you had more than your half!”.  These bites are not only perfect for snacking on by themselves but also adding to wraps or salads for a convenient warm filling. I have been using these bites as the perfect quick substitute for falafel in wraps and buddha bowls. When I step in the door after a long day, ravenous, it’s nice to know I can have a warm satisfying lunch or dinner made in under 15 minutes without any hassle.

One of the most important factors to a good wrap is a great spread – say hello to the Beet Bean dip, easy, tasty and vibrant.

Cooks in 25 Minutes

Ingredients

Hummus

1 tin cannellini beans

1 cooked beetroot

1 cloves of garlic

4 tbsp. olive oil

Juice of Β½ a lemon

Pinch of sea salt

Served with.

2 Wraps

8 cherry tomatoes diced

ΒΌ small cucumber washed and diced

8 small olives diced



Method

Method.

Preheat the oven to 200C.

Place the STRONG ROOTS Broccoli & Purple Carrot Bites on a baking tray and cook as per instructions on the pack.

In the meantime, blend all the dip ingredients until smooth.

Build your wrap!

Store the dip in the fridge for up to 3 days.
