Avocado, Cashew & Feta Dip

This easy and creamy avocado feta dip can be made in minutes. Serve with pita, veggie sticks and eggs.

  • 1 ripe avocado
  • 50g feta
  • 30g raw cashew nuts
  • Juice of 1 lemon
  • 1 tbsp. chopped parsley
  • 2 tbsp. chopped coriander


  1. Place the avocado, feta, lemon, herbs and half the cashews in a food processor and blend into a smooth thick paste.
  2. Add in the rest of the cashews and blend for 20 seconds to break them up but still leave a little crunch.
