The Ultimate Easy 3 Bean Chilli

Chilli was one of those meals I often craved when I started eating plant based. I love Lentil Chilli, Mushroom Chilli, Tofu Chilli but there’s something about an ultimate Bean Chilli that gives that extra satisfaction. It’s comfort food on another level, paired with crunchy homemade chips and cooling yogurt. It’s the perfect vegan dish to make if you love chilli or transitioning to eating more plant-based meals or looking to try some vegan recipes. You can switch around the beans if you prefer but, I highly recommend the ones I used in this recipe.

Serves 4

Cooks in 30 Minutes

Ingredients

1 tbsp. olive oil
1 large onion peeled and diced finely
4 cloves of garlic peeled and minced
400g mushrooms washed, sliced
50 ml water
1 tbsp. ground cumin
1 tbsp. smoked paprika
½ tbsp. ground coriander
1 tbsp. oregano
1-2 tsp. chilli powder (optional)
1x tin (400g) kidney beans drained and rinsed
1 x tin (400g) borloitte beans or other preference drained and rinsed
1 x tin (400g) black beans drained and rinsed
2 tins (800g) chopped tomatoes
1 tbsp. tomato paste
2 tbsp. Worchester sauce
1 tbsp. maple syrup (optional)
4 normal wraps cut into triangles
Juice of 2 limes
4 dollops of coconut yogurt
Grated cheese (I used Violife) for a topping
Fresh coriander, chopped



Method

In a large pot, add the olive oil and toss in the onion and garlic. Cook for 2 minutes constantly tossing until golden coloured.
Next, add the mushrooms and spices cooking for 2-3 minutes until the mushrooms are tender.
Add the 50 ml of water to the pot at this stage so the bottom of the pan doesn’t stick.
Next throw in the beans, chopped tomatoes, tomato paste, Worchester sauce and stir well. Bring the pot to a steady simmer for 6-7 minutes.
While the pot is simmering, take the wrap triangles and place on a flat baking tray.
Bake for 8-10 minutes at 180•C until lightly coloured. Let cool for a minute so they get nice and crunchy.
Serve the Bean Chilli in a bowl with a dollop of cooled coconut yogurt (to balance out the heat), some shredded cheese, juice of half a lime, fresh herbs, and the homemade nachos!
