
Miso Aubergine

Ok, get ready for this. I love roasted aubergine and if this is not the best version you have I don’t know what is. It’s so good you won’t want to share so maybe make double. The miso really gives a memorable taste to this aubergine that will almost be falling apart for a moreish veggie side dish.
Serves 4 portions (alongside rice and greens)
Cooks in 40 Minutes
Ingredients
2 very large aubergines washed and sliced very thinly
70 ml olive oil
4 tbsp soy or tamari sauce
3 tbsp. maple syrup
3 tsp. miso paste
Method
Preheat oven 180°C
In a bowl combine the oil, soy, maple, and miso into a smooth sauce.
Prepare the aubergine on a flat baking tray, pour over the miso sauce, and combine
well covering all the slices.
Place in the oven for 40 minutes, stirring and turning the slices over halfway through- this step is important.
Serve alongside rice and greens and enjoy!
