Cooks in 15 Minutes
Ingredients
- 150G Pecans
- 100G Hazelnuts
- 100G Raisins
- 80G Medjool dates
- 50G Mixed peel
- Zest of 1 Orange
- 2-3 tsp Mixed spice (depending on how much you love mixed spice)
- ½ inch Ginger peeled and grated
- 300g Icing sugar
- 5 tbsp lukewarm water
- 1 tsp Vanilla essence
Method
In a food processor add all the ball ingredients combine until all the ingredients are broken down and thick consistency.
Taking sections, roll 20 small balls about the size of a ping pong.
Place the balls onto a wire rack over a tray or parchment paper (to catch the dripping icing).
For the icing
Combine the icing sugar ingredient and stir until silky smooth.
Using a spoon drizzle the icing over each ball letting it cover the sides and drip down until they’re covered in a think icing layer.
Let set before digging in with a cuppa by the fire.
