Cauli Curry
Vegan Curry in a hurry. So easy and perfect to prep for lunch and dinner 😋

Cooks in 30 Minutes
Ingredients
• 1 tsp coconut oil
• 2 garlic cloves peeled and crushed
• 2.5 ginger peers and grated
• 3 tbsp curry powder
• 1 squash peeled and diced
• 1 head of cauliflower cut into florets
• 650ml veggie stock
• 2.5 tbsp tomato
• 2.5 tbsp peanut butter
• 1.5 tbsp tamari
• 1 tin Chickpeas
• Serve with Rice, Herbs, chilli flakes & Lime
Method
• Start by adding the oil then garlic, ginger and spices.
• Cook for a minute.
• Add the squash, cauliflower and veggie stock.
• Bring to boil and simmer on high with the lid on for 12-15 minutes until the veg is tender.
• Stir in the chickpeas.
• Turn the heat to low stir in the tomato paste, peanut butter and tamari and stir.
• Cook for a minute.
• Enjoy!
