Peanut Butter Banana Slice with Peanut Butter Frosting
WARNING; once you start it’s hard to stop. Have you meet a greater duo than banana and peanut butter? me nether! This nutty cake base paired with a soft smooth frosting is out of control. Just look at how easy it is to make. You’ll notice there is no added sweeteners here, but I promise it is sweet enough. Keep these treats in the fridge if you manage to have some left over – they will last up to 4 days.

Ingredients
- 1 large banana
- 70g ground almond
- 2 tbsp. peanut butter
- ¾ tbsp. baking soda
- 2-3 tbsp. almond milk
- 1 tbsp. apple cider vinegar
- 2 handful walnuts crushed
- 1.5 tbsp. flaxseed milled
- 2 tsp. cinnamon
Frosting
- 3 tbsp. coconut oil at room temperature
- 2 tbsp. peanut butter
- 2 tbsp. maple or honey
Topping
- Handful crushed walnuts (toasted are delicious here)
Method
- Preheat oven to 180°C.
- In a large mixing bowl mash the banana and combine all the ingredients (except the walnuts) to form a thick heavy batter, there will still be small visible bits of banana and that’s fine.
- Stir in the walnuts.
- Line a large bread tin with some baking paper and spoon in the batter. Smooth out the top using a spatula or the back of a spoon.
- Bake in the oven for 25 minutes.
- Now onto the frosting, in a small bowl combine all the ingredients and using the back of a spoon smooth out any lumps of coconut.
- Make sure the banana bread is FULLY cool before adding the frosting or it will melt!
- Spread the frosting over the top and slice into fingers! Finish with an extra sprinkling of walnuts.
