Juicy BBQ Jackfruit Burger

A smokey, juicy BBQ style jackfruit bap to get you in the summer mood. This is as tasty as it looks and oh so easy to make. Those of you who have never cooked with jackfruit before don’t worry its not complicated. Where do I buy jackfruit? well, I pick it up in my local market canned or try the asian markets by you for a fresh alternative. This recipe also goes great in a buddha bowl, rice bowl or a wrap. Cooks in 35 minutes Minutes

Ingredients

2 tbsp. tomato paste
2 tbsp. olive oil
50ml water
½ tsp onion powder
½ tsp garlic powder
1 tsp chilli powder
1 tsp paprika
2 tbsp. molasses

2 tins(450g jackfruit)

served with slaw, herbs, fresh burger buns and pickled cabbage.



Method

Preheat to 200°C
In a large bowl combine the BBQ sauce, add the jackfruit and using your hands combine and massage in the sauce.
Pour out the jackfruit and any excess sauce onto a flat lined baking tray.
Bake for 25 minutes until crispy around the edges.

Once removed stir to mix the cooked jackfruit with an excess BBQ sauce on the tray and using two forks pull the jackfruit apart( shred it).
Load up in some burger buns and slaw and your favourite fresh herbs!
