Simple Bircher Muesli

Summer is here but that doesn’t mean you have to ditch the morning bowl of oats. For a tasty sweet breakfast why not try out some bircher muesli featuring good old prune juice to pack some fibre. I have created this recipe in collaboration with sunsweet just like these ones here. They have also just launched their new eco friendly juice boxes that you can see in these pictures. Serves 1

Cooks in 5 Minutes

Ingredients

40g oats
2 tbsp. coconut yogurt
1 tbsp. chia seeds
1 tbsp. flaxseed
1 tbsp. dried fruit (like goji, chopped dates, sultanas)
1.5 tbsp. maple
½ grated apple
200ml Sunsweet Prune Juice



Method

In a bowl combine all the ingredients and mix well.
Let soak and sit overnight in the fridge.
Top with your favourite bits to add some crunch and enjoy cold.
