Pesto roasted potatoes recipe – an easy, tasty side dish, ready in 30 minutes!
• 400g potatoes skins (roughly potato skins from 8-10 large potatoes)
• 6 tbsp. vegan red pesto
• In a bowl add the potato skins and pesto. Combine to cover the peels in the pesto.
• Tip the peels onto a baking tray, spreading out evenly.
• Cook for 20-25 minutes until the peels are crispy.
• Delish served with some vegan mayo as a snack.
