Lamb Koftas

As a Lambassador… and yes that is a word I would like to welcome you to the beginning of Lamb season! With some of the worlds best Lamb producers we really need to take advantage! Lamb is one of the most organic meats you can eat, although a little less leaner than some other cuts of meat, its packed with mono-saturated fats and has nearly five times the amount of essential omega 3 fatty acids and alpha linoleum than beef. Lamb sometimes seems like an effort some dish to prepare and most often slow cooked, but there are some great tasty & simple recipes out there to embrace your love of Lamb! And to help get you started here is a nice and easy lamb recipe!

Ingredients

Lamb Koftas

  • 500g lamb mince
  • 1/2 red onion finely diced
  • 1 garlic minced
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1/2 tsp coriander
  • 35g pine nuts
  • 1/2 smoked paprika
  • 25g fresh parsley chopped
  • Black pepper

Dressing

  • tbsp tahini
  • Juice of 1 lemon
  • 3 tbsp water
  • Salt & pepper
  • 15g chopped fresh coriander


Method

  1. In a mixing bowl combine the raw mince with all the kofta ingredients.
  2. Roll into balls (6-7 depending on size).
  3. In a hot skilled pour a little oil and place in the koftas (in sections not to overcrowd), cook for 8-10 minutes continuously turning until cooked or alternatively grill in the oven.
  4. For the dressing combine the tahini, water and lemon juice drizzle over the koftas and sprinkle with fresh coriander.
