Great snack idea or if your planning an upcoming BBQ! Coleslaw doesn’t have to be something that is avoided anymore, dive in with this simple healthy recipe! This recipe makes a very large bowl and will last up to 4 days in a refrigerator, its actually nicer the next day that its made. On the second day I served it with flaxseed breaded chicken it was the perfect partner in crime!

Ingredients

COLESLAW INGREDIENTS

  • 2 roughly grated carrots
  • 1/2 head of white cabbage sliced
  • 1 onion finely chopped
  • 300 g fage greek yogurt
  • 1 tablespoon dijon mustard
  • 3 tablespoon apple cider vinegar
  • Black pepper

Method

  1. Place your carrots, cabbage and onion in a bowl and mix, in a separate bowl mix the rest of the ‘sauce’ ingredients.
  2. Combine them well.
