Easy Protein Muffins

Need a super easy snack to bring you back to life throughout the day? This is a high protein fix, far tastier than snacking on some chicken! Depending on they whey you use, you may not need the tbsp. of stevia, so taste as you go! The muffins are very filling and will last up to 4 days if kept in an airtight container, add the frosting as you need to the muffins as it will have to be kept refrigerated.

Ingredients

  • 100g ground almonds
  • 5 eggs
  • 2 scoops whey protein
  • tbsp. stevia
  • 2 banana- mashed
  • baking powder

Frosting

  • 180g soft cream cheese
  • 2 scoops whey – I used lemon cheesecake flavor whey (platinum and diamond)


Method

  1. Preheat the oven to 180°C
  2. Place all the muffins ingredients into a mixing bowl and mix using a fork into a thick batter.
  3. Spoon 2 tbsp of batter into each muffin case. Bake for 20 minutes.

For the frosting , place the ingredients into a bowl and using a spatula, stir until fully combined with no lumps. Dollop a large tbsp. of frosting on to each muffin as needed.
