Chia Jelly Donuts

They are finally here, a healthy take on my Deathrow dessert from The Restaurant show! I have always been a massive fan of donuts, cutting them from my life has been so hard because emulating a healthy version is just almost impossible! The night after the restaurant I had eaten so many I went to bed feeling so sick and with massive guilt, It has taken some time but I have finally starting the journey to creating a guilt free version that tastes so good! The outer shell of donuts from frying in coconut oil is mouth watering! I know the recipe is a bit long winded but follow it to a T and you’ll be enjoying a delicious result! These Last only 2 days…. They loose their crispiness after that, but don’t worry I will continue working on this recipe to make it even more epic!

Ingredients

What You Will Need!

  • 250g Oats- gluten free or regular
  • 4 tbsp Greek yogurt
  • 1 tbsp Baking soda
  • 2 tbsp Stevia
  • 4 Eggs

Filling

  • 50g raspberries
  • 50g blueberries
  • 2 tsp stevia

 

  • 4-6 tbsp. coconut oil for frying
  • 2 tbsp. extra stevia for rolling


Method

  1. Preheat OVEN TO 190°C
  2. Prepare a lined baking tin.
  3. In a food processor or nutria bullet, blitz the oats into a very fine flour.
  4. Add in the rest of the donut ingredients until a smooth batter forms.
  5. Prepare a small deep saucepan, and melt enough coconut oil to rise up at least 2 “along the side of the pot. Get the coconut oil to a continual simmer.
  6. With a soup spoon, gather a scoop of batter and slid it off using your finger into the hot coconut oil…. Be careful of splashes! (the batter will be sticky but once it is in the pot it should stay in a ball shape)
  7. It will start browning immediately, 20-30 seconds -using a slotted spoon turn over the donut to golden up the other side for a further 20-30 seconds, remove and place on a lined baking tray.
  8. Continue this until the batter is used up.
  9. Place the donuts into the oven for 7 minutes to cook through.
  10. Roll in the extra stevia to cover in a sugary coat.

Filling

  1. Remove and let cool (20 minute) before filling.
  2. For the filling heat the berries over low heat until dissolved, stir in the stevia and gentle bring to a simmer for 1 minute.
  3. Remove from heat and stir in the chia seeds, let sit for 15 minutes to thicken up.
  4. I used a baking syringe to fill up my donuts, but you can carefully make an incision using a knife and fill small amounts at a time. However, for ease I recommend popping down to a baking store!
