This easy and creamy avocado feta dip can be made in minutes. Serve with pita, veggie sticks and eggs.
- 1 ripe avocado
- 50g feta
- 30g raw cashew nuts
- Juice of 1 lemon
- 1 tbsp. chopped parsley
- 2 tbsp. chopped coriander
- Place the avocado, feta, lemon, herbs and half the cashews in a food processor and blend into a smooth thick paste.
- Add in the rest of the cashews and blend for 20 seconds to break them up but still leave a little crunch.
